Strawberry is a real challenge and even after forty years, this is still a work in progress. After trying a host of varieties, we now use Senga Sengana ; known for body and flavour. The big problem is colour. We don't use carrots, elderberries, cochineal or any other colours. The result isn't sunset-red, but the taste is a delight. 

We choose our cherries for their size and flavour for this delicious yogurt. Made in Yorkshire from all British milk and real fruit. 

Gooseberries are an unusual fruit. If you boil them in the presence of air, they go red in colour (just like the jam). 

 

We built a special device for cooking gooseberries to retain their flavour and colour. Then we tried all our yogurt bases and found they worked best with the fat-free bio; this might have something to do with the high level of natural fibre in gooseberries, which gives a very creamy mouthfeel without there being any cream there at all! The milder bio cultures don't overwhelm the delicate fruit flavour.

This wonderful combination of peaches and raspberries "Peach Melba" is both subtle and light, a treat in itself! 

Mandarin is a delicate fruit with a delicate flavour. We take mandarin segments and break them up so that some of the cells rupture and release their juice , with others remaining intact. The idea is for the juice to give an overall flavour to the yogurt, whilst each little cell carries its own fruit-burst of flavour. 

We chose Granny Smith apples to compliment the thick creamy base in this yogurt, as even after cooking they give you a little crunch when you find the real apple pieces.

Perhaps a little unpatriotic, but our rhubarb doesn't come from the Yorkshire Rhubarb Triangle.
